Day 141: Cookie Ice Cream Sandwiches

Finally, it's warming up (consistently at least) in Seattle! Every day when I step outside, it's burning. I love summer, but I also love summer treats. So go to your kitchen and start making this yummy dessert: Cookie Ice Cream Sandwiches!

Anyway back to the post. These ice cream sandwiches are amazing. They are so addictive as well. You'll just keep eating them, I guarantee you.

First off, you don't need as much equipment as a normal ice cream sandwich. There's no molds or extra freezing. All you need to do is:

  1. Make your cookies

  2. Have your ice cream ready

  3. Assemble


It's that easy. When it comes to cookie flavors, you can choose anything. Funfetti cookies are a great pop of color so I love them. But I also enjoy chocolate chip cookies. Another idea is to put sprinkles and chocolate chips together into one cookie

The same goes for the ice cream, it's totally up to you. I like the classic vanilla. But cookie dough, strawberry, and chocolate are all great choices. Make sure you use good quality ice cream. Or make your own as I did (I chose vanilla). It makes a world of difference.

You can roll the edges of the cookie ice cream sandwiches in sprinkles, chocolate chips, or nuts. I would love to hear which variation you used! 😉

RECIPE:


INGREDIENTS:

  • 8 tablespoons butter

  • 1/3 cup granulated sugar

  • 1/3 cup light brown sugar

  • 1/2 teaspoon salt, optional, adds a good taste

  • 1 teaspoon vanilla

  • 1/4 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 1 large egg

  • 1 1/2 cups all-purpose flour

  • 1 tablespoon milk

  • 1 1/2 cups add-ins(chocolate chips, sprinkles, nuts, etc.)

STEPS:

  1. Beat together the butter, sugars, salt, vanilla extract, baking soda, baking powder until creamed.

  2. Add in an egg and all-purpose flour. Slowly pour in the milk and beat in the add-ins as well. With a cookie scoop, drop onto a lined baking sheet. Bake for 14 minutes at 375 degrees F.

  3. Add a scoop of ice cream on one cookie. Add another cookie on the top and serve immediately.
