Week 111: Cortadillo

Because dot cakes have been such a popular trend, I have also discovered cortadillo. It’s a Mexican vanilla cake topped with pink icing and sprinkles.

Cortadillo is also known as Pastel de Niños or Mexican Pink Cake, and it is typically cut into squares or triangles to be served in Mexican bakeries.

It does look quite similar to the dot cake, and dare I say, a little better? While both are delicious (trust me, I finished two dot cakes in a day), I will say a cortadillo is perfect for a large group.

Plus, the pink icing really makes the cake look like an absolute showstopper. It’s easy to make but will impress all your guests wherever you serve this.

RECIPE:


INGREDIENTS:

Cake:

  • 3 eggs

  • 3/4 cup granulated sugar

  • 3/4 cup vegetable oil

  • 2 teaspoons vanilla extract

  • 1 1/2 cups all-purpose flour

  • 2 teaspoons baking powder

  • 3/4 cup milk

Icing:

  • 1 1/4 cups powdered sugar

  • 2 drops red food coloring

  • 1 tablespoon milk

STEPS:

  1. Preheat your oven to 350 degrees F, and line a 9-inch cake pan with parchment paper.

  2. In a large bowl, mix the eggs and sugar until light with a whisk. Add in the oil and vanilla extract. Finally, mix in the flour, baking powder, and milk. Pour the batter into your prepared pan and bake for 35 minutes. Allow the cake to cool to room temperature.

  3. Make the icing by mixing the powdered sugar, food coloring, and milk. Spread it over the cooled cake and serve.
