Day 345: Crispy Baked Tofu Nuggets

These crispy baked tofu nuggets are not only easy to make, but they are absouloty perfect for snack.

Instead of classic chicken nuggets, I made these with tofu. Plus you don't have to fry these nuggets. All you have to do is bake them.

And if you don't have any breadcrumbs on hand, don't worry. You can make them yourself. First, you are going to toast four bread slices. If you don't have bread, bagels work perfectly! I made these breadcrumbs with whole wheat bread, but you can use whatever you want. After your bread slices are toasted, blend them in a food processor. That's it, so simple!

Another helpful tip is to really press out all that liquid from the tofu. By adding weight on top of the towel-covered tofu block, you'll take that liquid out.

Go ahead and try these for yourself, and remember, the number one rule is to eat these with a cheese sauce! :)

RECIPE:


INGREDIENTS:

  • 2 box firm tofu, with all the liquid pressed out. See notes above.

Egg Mixture:

  • 1 egg

  • 1/4 cup whole wheat flour

Breadcrumb Mixture:

  • 1 cup breadcrumbs

  • 1 teaspoon paprika

  • 1 teaspoon black pepper

  • 1 teaspoon salt

  • 1 teaspoon garlic powder

STEPS:

  1. Cut your tofu into about 12 blocks. Set aside. Preheat your oven to 425 degrees F.

  2. In a small bowl mix together your egg and flour. In another bowl mix the breadcrumbs, paprika, pepper, salt, and garlic powder.

  3. With a pastry brush, brush the egg mixture all around a tofu nugget. Dip this into the breadcrumb mixture and repeat. Lay them on a baking sheet lined in parchment paper. Bake for tofu nuggets for 25 minutes.
