After a long time of searching I finally found this recipe by Taste of Kitchen! This mini blueberry tarts were definitely the highlight of day!
This should be the texture of the mixture.
Now chill in the refridgerator for an hour.
I LOVE this color of pink, it just made me smile when I saw it!
I wanted to try out how just blueberries would turn out!
RECIPE:
Ingredients:
Pie Crust (by the Art of Pie)
1 1/4 cups all purpose flour
1/4 teaspoon salt
7 tablespoons unsalted butter cut into cubes
1/2 cup ice water
Blueberries
2 cups fresh blueberries
1/3 cup sugar
4 teaspoons cornstarch
2 sheets refrigerated pie crust
1 large egg yolk, lightly beaten
STEPS: Put all the ingredients put the ice water and mix together with your hands until they look like cracker crumbs with lumps the size of peas and almonds.
Sprinkle ice water over the mixture and stir with a fork. Squeeze a handful of dough and see if it holds together. If it doesn't add more water.
Wrap in plastic warp and chill for an hour.
While the dough is chilling squash half of the blueberries.
Mix the sugar and cornstarch together and add the whole and crushed blueberries in. Mix well.
Take out the dough and roll it. Drape it over each pie tin and make sure everything is held strong. (No cracks) Spoon blueberry mixture in and bake for 14 minutes.
