Day 225: Spinach Mac and Cheese

Spinach mac and cheese is one of my favorite meals! Its filled with melty cheese and pasta. It’s a dream come true.

This is my favorite mac and cheese recipe! I love the addition of spinach because it adds a different kind of texture. If you’re not a fan of spinach, feel free to omit.

Note that because of all the spinach in the mac and cheese, your sauce will turn green. Don’t be worried!

Once you add your sauce to the pasta, it will turn white. Also 2 cups in the spinach is best! Don't do more or less.

This mac and cheese is creamy, cheesy and you will definitely ask for seconds. I love to top my mac and cheese off with toasted breadcrumbs. It adds a great crunch!

RECIPE


INGREDIENTS:

  • 1 ½ cups elbow pasta

  • 1 tablespoon butter

  • 2 tablespoons flour

  • 2 cups 2% milk

  • 2 cups spinach, chopped into small pieces

  • 1/2 cup mozzarella cheese

  • 1/2 cup cheddar cheese

  • Salt and pepper to taste

  • Breadcrumbs, optional

STEPS:

  1. Cook your pasta according to the packages instructions. Drain once finished.

  2. Meanwhile, melt your butter on a pan. Add flour and cook for 30 seconds. Pour in your milk and cook until thickened. It will take around 6 minutes.

  3. Stir in your chopped spinach and salt and pepper to taste. cook until spinach is wilted. Stir in you two cheeses and add it to your pasta. Serve with breadcrumbs.
