For this post I made lemon cookies because I wanted to use the cookie stamp that has been lying in my cabinet for a LONG time. Funny thing is, the stamp says, "Made With Love", and on my home page I also say something like that. It seemed perfect, so obviously you don't have to make a stamp or anything, it's just a fun idea!
The recipe I used, had really sticky dough, so I had to add a lot more flour.

Roll into a ball and press down with a stamp OR press down with a spoon. Because there is so much self rising flour make sure to press down really hard.
Make this lemon syrup to add on the top of the cookies once they are baked.

RECIPE:
INGREDIENTS:
1/2 cup lemon juice + more
lemon zest (half of a lemon will work just fine).
1 cup butter, softened
1/2 cup brown sugar
1 large egg, room temperature
1/2 teaspoon vanilla extract
2-1/2 cups self-rising flour
STEPS:
Preheat oven to 375 degrees, and grease a baking sheet.
Cream together butter and sugar and then add lemon juice, lemon zest, egg, and vanilla extract. Slowly add in flour.
Roll into a ball with your hands (if using a stamp press down at this stage), and flatten slightly with a spoon. Bake for 10-12 minutes.
Mix 2 tablespoons of lemon juice and 1 teaspoon of water together and brush onto cookies.
