Day 38: Hummingbird Cake

Today after searching through cookbooks and online recipes; I finally stumbled along this amazing hummingbird cake recipe! Plus I didn't have any cream cheese on hand so I decided to make my own! Here is the recipe if anyone is interested: CREAM CHEESE RECIPE HERE! This cake is definitely worth making to a birthday party, wedding or any even to be honest.




As you can see, once you've mixed each mixture separately, add them all together and finally pour it into a pan. Tip: Grease your pans with a lot of butter, otherwise your cake will stick to its pan.

I made my frosting with brown sugar which may not have been the smartest decision but it still tasted amazing. I recommend using powdered sugar - it does matter!

Layer and top with flowers or anything you wish!



RECIPE:


INGREDIENTS:

1 cup mashed banana

1 cup pureed pineapple

1 1/2 cups brown sugar

3/4 cups vegetable oil

2 large eggs

1 1/2 teaspoons vanilla extract

2 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/2 teaspoon salt

1/2 cup butter

4 oz cream cheese

1 1/2 cups powdered sugar*

2 tablespoons lemon juice

zest of half a lemon

2 tablespoons milk


STEPS:

Preheat oven 350 degrees and grease 2, 8" pans.


Mix together banana, pineapple, brown sugar, oil, eggs, and vanilla extract. Then in a medium bowl whisk flour, baking powder, baking soda, cinnamon, and salt. Add the dry into the wet and pour into pans - bake for 30 minutes.


Combine powdered sugar*, butter, cream cheese, milk, and lemon zest + juice in a blender and set aside.


Take the cakes out of their pans and layer frosting in the middle and on the top.

*I used brown sugar which didn't have much of an effect color wise but it still tasted great!
