Day 209: Mini Muffin Tin Doughnut Holes

Doughnuts holes done in less then 30 minutes? Yes, please! You'll get these bites of heaven done so quickly...and it will be eaten just as fast! 😉

These are made in a mini muffin pan, so you don't even have to fry them. They're kind of like mini muffins, but taste like doughnuts rolled in cinnamon sugar.


There is no mixer required as well. What's more to want in these doughnut holes? I've always loved doughnut holes (or munchkins) because they're bite sized.


I used this recipe from America's Test Kitchen's book: The Complete Baking Book for Young Chefs. All the recipes are so good!


As soon as I took my first bite, of my first doughnut hole ever, I was immediately addicted. This recipe is so delicious! Trust me, you will be eating the whole batch.

RECIPE:


INGREDIENTS:

  • 1 1/3 cup all-purpose flour

  • 2 tablespoons cornstarch

  • 1 1/2 teaspoons baking powder

  • 1/4 teaspoon nutmeg

  • 1/4 teaspoon cinnamon

  • 1/2 cup granulated sugar

  • 1/2 cup buttermilk

  • 4 tablespoons butter, melted

  • 1 egg + 1 egg yolk

Cinnamon Sugar:

  • 4 tablespoons butter, melted

  • 1/2 cup granulated sugar

  • 1/2 teaspoon cinnamon

STEPS:

  1. Preheat your oven to 400 degrees F, and grease a mini muffin tin.

  2. Whisk together your flour, cornstarch, baking powder, nutmeg, cinnamon, and sugar. In another bowl mix the buttermilk, butter, and egg + egg yolk. Add the flour to your liquid ingredients and mix to combine. Spoon in a tablespoon worth of batter into each muffin tin cup. Bake for 10 minutes.

  3. While your doughnut holes are baking make the cinnamon sugar. Melt your butter in a small bowl. In a separate bowl whisk the sugar and cinnamon together.

  4. Take a cooled doughnut hole and brush on some butter all around it. Roll your doughnut hole in the cinnamon sugar and serve!
