Day 229: Ferrero Rocher Cake

Have you ever had a Ferrero Rocher? It's my favorite! It's a stuffed hazelnut covered ball filled with a creamy nutella center.

I live for nutella! So naturally I love Ferrero Rocher's. I decided to make a cake out of these Ferrero Rocher's today, and I'm loving it.


It's filled with a creamy nutella frosting and crushed up Ferrero Rocher pieces inside! The cake is a classic, moist chocolate cake.

If you want, you can replace 3/4 cup of the all-purpose flour, with hazelnut flour. I was going to, but my hazelnut flour didn't come in time. All-purpose flour ended up working, but if you want to connect the frosting and cake a little better, I recommend the hazelnut flour! If you don't have hazelnut flour on hand, that's totally fine as well!


You will absolutely love this cake. It's moist and creamy with a yummy crunch. Plus it's piled high with 6 cake layers! If slicing the cake layers in half seems daunting, you can just keep 3 large layers, and it will still work amazingly!


Most people eat Ferrero Rocher's in the the winter, but I decided to make this cake anyway! I know I should be focusing more on Halloween desserts, but today just felt like a celebration day! 😉

RECIPE:


INGREDIENTS:


  • 1 1/2 cups all-purpose flour

  • 1 1/2 cups granulated sugar

  • 3/4 cup cocoa powder

  • 1 1/2 teaspoons baking soda

  • 1 teaspoon baking powder

  • 1/4 cup vegetable oil

  • 3/4 cup buttermilk

  • 3/4 cup hot water

  • 2 large eggs

Nutella Buttercream:

  • 1 1/2 cups unsalted butter, softened

  • 3/4 cup nutella

  • 1 3/4 cups powdered sugar

  • 3/4 cup cocoa powder

Filling:

  • 1 cup chopped Ferrero Rocher's


STEPS:

  1. Whisk together all you dry ingredients in a bowl. Then add all your wet ingredients except the water in. Slowly pour the water, mixing with a spatula. The mixture will be runny, but that's okay!

  2. Pour into 3, greased, 6" pans. Bake for 35 minutes, in an oven preheated to 350 degrees F. Once your cakes are cool, slice each layer in half.

  3. While your cakes are cooling make the frosting. Beat your butter, powdered sugar, and cocoa powder together in a stand mixer. Slowly add your nutella and beat on high for 3 minutes. Frost onto your cake and make sure each layer as a 3 tablespoons chopped Ferrero Rocher's. Top with Ferrero Rocher's on the top, and hazelnut chunks on the sides.
