Day 276: Frittata Egg Muffins

Before I introduce these delicious frittata egg muffins, I have an announcement to make! I just set up a new poll yesterday: hot chocolate bombs!

Hot chocolate bombs are little chocolate shells filled with hot chocolate mix and marshmallows. When you add milk to it, the bomb bursts and you have hot chocolate. Perfect for winter! The poll is going to end on January 1st, so get your vote in now!

Frittata egg muffins are very similar to my mini quiche recipe, but they are crustless. I also make them in a standard muffin tin instead of a mini muffin tin. These are easy to serve and a perfect bite-sized snack.

I like to add red pepper, spinach, and cheese. You can roast the red pepper or just have it freshly cut, both are fine.

I use either feta or cheddar cheese. I tend to like feta more because it gives you a really unique taste, but it's up to you!

RECIPE:


INGREDIENTS:

  • 6 eggs

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/3 cup red pepper, chopped into small pieces

  • 1/4 cup chopped spinach

  • 1/4 cup feta or cheddar cheese

STEPS:

  1. Preheat your oven to 350 degrees F and spray a muffin tin with baking spray.

  2. Mix all your ingredients in a large bowl. Divide evenly among your muffin tins. You should fill the quiches to the brim. Bake for 25 minutes and cool for 5 minutes. The frittatas will deflate a bit as they cool.
