I am not kidding; there is no added sugar in this cake. Just bananas. Plus the cake only needs whole wheat flour.

Even the frosting is sugarless. For the frosting, I made a whipped cream sweetened with fruit. No powdered sugar!

Freeze-dried fruit is a must. Do not substitute for fruit puree. It just won't be the same. Banana and strawberry freeze-dried fruit are great together, especially with the banana cake. I recommend it, you'll still taste the strawberries, but the bananas will add sweetness to the whipped cream.

The cake itself is a "naked" cake, so it's super simple to frost. The heart-shaped cake pan and the strawberry frosting is perfect for Valentine's Day! Make sure to use all the bananas!

INGREDIENTS:
Cake:
3 cups whole wheat flour
1 tablespoon baking powder
2 teaspoons baking soda
10 large bananas, mashed
2/3 cup butter, melted
1 tablespoon vanilla extract
2 eggs
1/4 cup milk
Whipped Cream:
2 cups heavy whipping cream
1 cup freeze-dried fruit, blended into a powder
STEPS:
Preheat your oven to 375 degrees F and grease two 9" cake pans with butter.
In a large bowl, mix all the cake ingredients. Divide into the two cake pans and bake for 40 minutes. Cool for at least 30 minutes on a wire rack.
With an electric mixer, beat the heavy whipping cream until stiff peaks form. Fold in the fruit powder and frost your cakes!
