Day 331: Healthy Banana Cake With Strawberry Frosting

I am not kidding; there is no added sugar in this cake. Just bananas. Plus the cake only needs whole wheat flour.

Even the frosting is sugarless. For the frosting, I made a whipped cream sweetened with fruit. No powdered sugar!

Freeze-dried fruit is a must. Do not substitute for fruit puree. It just won't be the same. Banana and strawberry freeze-dried fruit are great together, especially with the banana cake. I recommend it, you'll still taste the strawberries, but the bananas will add sweetness to the whipped cream.

The cake itself is a "naked" cake, so it's super simple to frost. The heart-shaped cake pan and the strawberry frosting is perfect for Valentine's Day! Make sure to use all the bananas!

Not only is the cake meant to taste like bananas, but it needs sweetness. Now you can feel great about eating cake!

INGREDIENTS:

Cake:

  • 3 cups whole wheat flour

  • 1 tablespoon baking powder

  • 2 teaspoons baking soda

  • 10 large bananas, mashed

  • 2/3 cup butter, melted

  • 1 tablespoon vanilla extract

  • 2 eggs

  • 1/4 cup milk

Whipped Cream:

  • 2 cups heavy whipping cream

  • 1 cup freeze-dried fruit, blended into a powder

STEPS:

  1. Preheat your oven to 375 degrees F and grease two 9" cake pans with butter.

  2. In a large bowl, mix all the cake ingredients. Divide into the two cake pans and bake for 40 minutes. Cool for at least 30 minutes on a wire rack.

  3. With an electric mixer, beat the heavy whipping cream until stiff peaks form. Fold in the fruit powder and frost your cakes!
