Day 223: Homemade Panini Sandwiches

A big thank you to all the poll questions and the orders for the "Bored Baker Cookies" that you submitted! It means so much to me!

I absolutely love panini sandwich's! They're more of a summer sandwich, but I eat them year round! A panini contains:

  1. Panino Rolls

  2. Pesto

  3. Tomatoes

  4. Mozzarella

  5. Spinach

You can throw this panini recipe together in under 10 minutes! It's a perfect quick lunch for a busy day. But it tastes so good.

Have you had a panini sandwich before? The first time I had one, it was from Starbucks! After a while my mom just decided to make our own, and this recipe we created.

Over the years, it's still been a favorite. It's a winner every single time.

We actually haven't been able to buy the rolls for a year, so it has definitely been a while since I ate a panini. It was a great meal!

|Level: 👩🏽‍🍳|Time: 10 minutes| Serves: 3-4|

RECIPE:

INGREDIENTS:

  • 4 panino rolls

  • 1/4 cup pesto

  • 1 tomato, cut into thin slices

  • 1/2 cup fresh mozzarella, cut into very small crumbs

  • 1/4 cup spinach leaves

STEPS:

  1. Heat a panini press and gather your ingredients together.

  2. Cut your panino roll in half so that you have two slices of bread. On one, add a spoonful of both pesto and mozzarella. Add two tomato slices and 2 -3 spinach leaves. Place your other slice of bread and place onto your prepared pan. Cook both sides, each for 2 minutes. Make sure each side you're pressing down with the top of your grill (panini) press. Serve!

Enjoy!
