Day 259: Homemade Rabri

Tomorrow is Thanksgiving and I'm going to be baking the poll winner pie! I'm excited for how it will turn out! Remember that I've put a new poll up so make sure to vote now.

Does rabri ring a bell? I made a baked Indian sweet dish way back in August. Rabri is basically sweetened boiled down milk.

It's so delicious on its own, but best paired with heavenly gulab jamun. Now that's my ideal dessert! It makes my mouth water just thinking about it.

In my rabri recipe I add some breadcrumbs. I love using breadcrumbs because they give a great texture! My advice to you is to only use whole milk. Otherwise it's going to take hours to thicken up! That's obviously not that fun, so I recommend buying some whole milk. :)

I hope you'll love this creamy sweetened milk as much as I do! It's so good with the cardamom and nuts on top!

RECIPE:


INGREDIENTS:

  • 6 cups whole milk

  • 1 teaspoon cardamom

  • 1 cup bread crumbs

  • 1/4 cup granulated sugar

  • a few strands of saffron, optional

STEPS:

  1. In a large pot boil your whole milk. Turn down to a simmer and stir every 10 minutes. You'll see a large spot of froth growing on the top of your milk. With a spoon or spatula break it up. Do this every time you stir.

  2. Keep repeating this process for an hour or so, and then add your cardamom, breadcrumbs, sugar and if desired, saffron. Serve in ramekins and top with nuts!
