Day 105: Hong Kong Style Mango Pancake

I tried my first "mango pancake" about a year ago. I walked into that store and decided to order a mango pancake, thinking it was a normal fluffy pancake flavored with mangoes. I was soooo wrong. Instead, it was a fluffy crepe filled with fluffy whipped cream and a big mango chunk in the middle. YUM!

You only cook one side. This is the case because you don't want to show that the other side is burnt a little.

So when you're assembling make sure that when you fold your crepes, so that the nice side is showing.

The batter will actually be really runny. Like "milk" runny.

I like to eat these for breakfast (😏), or a light dessert! Trust me you'll be addicted FAST!

RECIPE: INGREDIENTS:

  • 1 cup milk

  • 1/3 cup flour

  • 1/4 cup corn starch

  • 1/4 cup powdered sugar

  • 3 medium eggs

  • 2 tablespoons butter, melted

For the filling

  • 1 1/4 cups heavy whipping cream

  • 1/2 tsp vanilla extract

  • 1/2 tablespoon powdered sugars

  • 2 large mangoes, peeled & cut into chunks

STEPS:

Whisk together all the crepe ingredients and pour into an greased griddle over low heat. Spread out with a spoon to make a large circle. Cook on one side until bubbles form. Take off of heat and cool.


While the crepes are cooling, whip you filling ingredients together until stiff peaks form. Take a crepe, place a rectangle of whipped cream, and one mango. Fold over all sides so it becomes a square.
