Day 129: Kesar Pista Lassi

Kesar Pista lassi is a sweet, yet tangy pistachio/saffron drink.

Kesar means saffron in Hindi...and "pista" means pistachio, together these two flavors come together to make a refreshing drink!


If you want, you can crush some pistachios in a blender for a few seconds and add in on the top for decoration.

Since the pistachio is blended up in the mixture, crushed pistachio adds a lovely texture.

I used honey roasted pistachios, but you can also use unsalted pistachios (though those are hard to find these days).

But, you really should not use salted pistachios. They make your whole drink unnecessarily salty. Other than that...go make some Kesar Pista lassi!

RECIPE:


INGREDIENTS:

  • 1 cup yogurt

  • 2 tablespoons granulated sugar

  • 3/4 cup whole milk

  • 1/4 cup pistachios (more for decoration)

  • 4-5 strands saffron

STEPS:

  1. Combine all the ingredients in a blender and blitz for 30 seconds.

  2. Pour into cups and serve with crushed pistachio and saffron.
