Day 125: Key Lime Bars

Instead of key lime pie, I made key lime bars. They're easier to serve and are a hit for picnics.


For this key lime filling, you might want to add more or less key limes.


Depending on your taste, and key limes, it might be too sour or sweet.


You should chill these for a good 4 hours. Then add the whipped cream.


For leftovers you can put it in the refrigerator but when your ready for another round, make sure to thaw them.

If you don't have graham crackers, you can replace it with 1 box of vanilla wafers.

RECIPE:


INGREDIENTS:

  • 18 graham crackers

  • 6 tablespoons butter

  • 1 tablespoon granulated sugar

  • 1 1/2 cups condensed milk

  • 2/4 cup key lime juice

  • 1 teaspoon zested key lime

  • 3/4 cup heavy whipping cream

  • 1 tablespoon powdered sugar

STEPS:

  1. Preheat oven to 350 degrees. In a food processor, pulse graham crackers, butter, and granulated sugar. Press down into a 13x9" casserole pan and bake for 15 minutes.

  2. Combine, condensed milk, key lime juice, key lime zest, and egg yolks. Pour into graham cracker casserole pan. Freeze for 4 hours and serve!
