Day 127: Khachapuri

Khachapuri is a Georgian cheese bread, with an egg cracked in the middle! It tastes and looks so unique!

Even after you make a well, your egg white will probably run out. That's okay, it will taste great!

Some people see these shaped like a boat.


And some see them shaped like an eye.


You can stick 1/2 tablespoon unsalted butter on both ends of your khachapuri, but that's optional.


You can eat this for brunch, lunch, or dinner.

RECIPE:


INGREDIENTS:

  • 1 teaspoon active dry yeast

  • 1 tablespoon granulated sugar

  • 3 1/2 cup all-purpose flour

  • 1 cup of water

  • 1/2 cup milk

  • 1 tablespoon olive oil

  • 1 1/2 cup Farmers cheese

  • 1 1/2 cup shredded mozzarella

  • 1/2 cup Feta cheese

  • 4 eggs + 1 for egg wash

  • unsalted butter optional

STEPS:

  1. Preheat oven to 450 degrees F.

  2. Mix yeast, sugar, and flour in a large bowl. Over medium heat stir water and milk together. Poke your finger, and check if it's a slightly warm to touch. Add this to your yeast/flour mixture, knead, and form a ball. Cover and proof for an hour and 10 minutes.

  3. Cut into 4 sections and roll each one out into a circle 9" in diameter. Fold over to make a boat or eye shape, and fill with cheese. Brush egg wash on and bake for 15 minutes.

  4. Take out and make a small well in the center of your khachapuri, and crack an egg in. Bake for 8 more minutes and serve.
