Day 279: Lace Sandwich Cookies

These lace sandwich cookies are buttery caramel goodness! Not to mention they are filled with either melted chocolate or Nutella.

These can be whipped up in a flash, and are finished in about 35 minutes. I like that these lace sandwich cookies only make 5-6 cookies in total. Perfect for a small treat!

Lace sandwich cookies are gluten-free and are very crisp and flaky. If you don't have chocolate/Nutella, they also taste great with caramel sauce. If you don't want to fill these cookies at all, you can just have them served plain. It will still taste fantastic!

Make sure your cookies are spread far apart on the baking sheet. Otherwise, they will overspread and won't look good. I love these cookies in particular because they are so unique.

Usually, when you have a sandwich cookie, they're thick and so sweet. However, these cookies are thin and delectable. It's worth trying out, so give it a go!

RECIPE:


INGREDIENTS:

  • 1/4 cup butter

  • 1/3 cup almond flour

  • 1/3 cup brown sugar

  • 1 tablespoon milk

  • 1/4 cup melted chocolate/Nutella

STEPS:

  1. Over medium heat melt butter in a large saucepan. To this pan add flour, sugar, and milk. Cook for two minutes or until the sugar is dissolved. The mixture will be grainy but that's okay! Rest for 7-10 minutes so the cookie dough thickens up.

  2. While your cookie dough is resting preheat your oven to 350 degrees F. Line two baking sheets with parchment paper. Take a teaspoon worth of cookie dough and place it onto the baking sheet. Repeat until you use up your dough. Make sure your cookies are 3" away from each other.

  3. Bake for 10 minutes or until golden brown. Cool for 5 minutes then spoon your filling of choice onto one side of the cookie. Place a cookie on top and serve.
