Day 355: Lemon Bars

Hi everyone! I'm so excited to share my article is on Time for Kids! It will be published in print on March 12th.

To celebrate, I baked these luscious lemon bars. These will surely bring a smile to your face!

Lemon bars are little squares of sunshine on a plate! They are easy to make and are guaranteed to be devoured in less than a day.

Making lemon bars are quite simple. Bake the crust (which is just made in a food processor!) and add your lemon filling.

Bake once more and chill. Chilling is very important because you want your bars to set up nicely. No one wants raw, runny lemon bars! ;)

These are perfect for bake sales, parties, picnics, or just a sweet treat for your afternoon. This lemon bar recipe will be a favorite in no time!

RECIPE:


INGREDIENTS:

Lemon Bar Base:

  • 1 1/4 cup all-purpose flour

  • 1/4 cup powdered sugar

  • 3/4 cup cold butter, cut into chunks

Lemon Filling:

  • 5 eggs

  • 1/2 cup lemon juice

  • 2 tablespoon lemon zest

  • 1 1/4 cup powdered sugar

  • 2 1/2 tablespoon all-purpose flour

STEPS:

  1. Preheat your oven to 375 degrees F, and line an 8x8-inch square baking pan with parchment paper. With a food processor, blend all your lemon bar crust ingredients. It will be crumbly, but that's okay! Press the base firmly into your baking pan and bake for 35 minutes.

  2. While your base is baking, make the lemon filling. In a large bowl, mix the eggs, lemon juice, lemon zest, powdered sugar, and flour. As soon as your crust is done baking, pour the lemon filling on top. Don't wait to cool! Immediately bake in the oven for 25 more minutes.

  3. Once your lemon bars are done baking, chill in your fridge for two hours. Dust with powdered sugar, cut into bars, and serve!
