Week 104: Meskouta

Meskouta is a Moroccan orange bundt cake that has become my new obsession these past few weeks.

I was craving something orange ever since the weather got warmer in Seattle, because I think orange is the definition of Spring.

I stumbled across this cake by chance when I was actually trying to find a recipe for a red velvet bundt cake.

I know both cakes are quite unrelated, but somehow, by luck, I was able to learn more about this cake. It’s simple yet delicious and perfect as an afternoon snack with a cup of tea.

RECIPE:


INGREDIENTS:

  • 4 eggs

  • 1 1/4 cups granulated sugar

  • 1/3 cup orange juice

  • 1/2 cup vegetable oil

  • 2 cups all-purpose flour

  • 3 teaspoons orange zest

  • 2 1/2 teaspoons baking powder

STEPS:

  1. Preheat your oven to 350 degrees F, and grease a bundt pan with baking spray.

  2. In the bowl of your stand mixer, beat the eggs and sugar until light and fluffy. Then slowly add the oil and orange juice. Then, fold in the flour, baking powder, and orange zest.

  3. Pour the batter into your bundt pan and bake for 40 minutes. Allow to cool to room temperature and serve.
