Day 97: Oatmeal Pancakes

These oatmeal pancakes don't have flour, oil (butter included), or sugar! They are quick, simple, and you don't need a mixer!

The bananas play a big part of the pancakes just because they are the sweet part of it. Don't skip out on them.

The batter will not be thick at first, but as you mix it will get better.

They are so yummy and fluffy you won't regret eating 4! 😋

RECIPE:


INGREDIENTS:

  • 1 1/2 cups rolled oats

  • 1/2 cup milk

  • 1 tablespoon baking powder

  • 1/2 tablespoon apple cider vinegar

  • 1 teaspoon vanilla extract

  • 1 1/2 bananas (mashed)

STEPS:

  1. Whisk together rolled oats and baking powder. In another bowl mix together, milk, apple cider vinegar, vanilla extract, and the mashed bananas. Add the wet into the dry and give a final few stirs.

  2. Heat your griddle, and grease it with oil, pour 1/4 cup of batter into the middle and flatten it out with a spoon. Cook for 1 -2 minutes on the first side over medium-high heat. Flip and cook another 1-2 minutes and serve with toppings of choice.
