Day 102: Orange Pistachio Biscotti

Happy father's day everyone! Today I made orange pistachio biscotti for my dad because biscotti is his favorite. Orange and pistachio is not the very first thing I would think of when I say "common". Actually I was gonna make my dark orange biscotti for my dad today, but I didn't have any almonds. Improvising, I decided to pistachios. I had never tried pistachios with orange so I was very very nervous as I put in the oven. Luckily the smell made me know it was the right move, these taste amazing!

Like I said above, pistachios and orange don't seem like a common flavor combo...

but they are amazing together!

And especially good for chai. That's the way my dad likes his biscotti - dipped in chai!

Make sure you have some pistachio chunks. They can't be blended finely.

RECIPE:


INGREDIENTS:

  • 2 and 3/4 cups all-purpose flour

  • 1 1/4 cup light brown sugar

  • 1 teaspoon baking powder

  • 1/2 teaspoon ground cinnamon

  • 1/2 teaspoon salt

  • zest of 2 oranges

  • 1/4 cup unsalted butter (cubed)

  • 1 cup blended pistachios

  • 3 large eggs

  • 4 Tablespoons fresh orange juice, use fresh - it makes a difference

  • 1 Tablespoon canola oil

  • 1 teaspoon vanilla extract

  • egg wash

STEPS:

In a large bowl combine flour, brown sugar, baking powder, salt, and zest. Cut in the butter and add in the pistachios. In a separate bowl whisk together eggs, orange juice, canola oil, and vanilla extract. Add the wet mixture into the dry and knead together until it becomes a smooth ball. Cut in half and place on a baking sheet. Pat into a 6 x 4-inch rectangles, and brush egg wash. Bake for 25 minutes at 350 degrees.


After 25 minutes take out and cut 1/4-inch slices and bake for another 8 minutes.
