Day 116: Paneer Tikka Masala

Paneer tikka masala is a staple in my house. I like to eat with naan and rice!

Paneer is an Indian cottage cheese that's used in dishes both savory and sweet.

You may know a variation of this dish called chicken tikka masala.

This is exactly the same minus the chicken and filled with rich chunks of paneer.

Substitutions: If you don't have heavy whipping cream you can use half-and-half. No paneer? You can make your own with lemon and milk.

RECIPE:


INGREDIENTS:

  • 1 red onion, chopped

  • 4 garlic cloves, minced

  • 1" ginger, minced

  • 6 tomatoes, chopped

  • 2 bay leaves

  • 1 tablespoon crushed dry fenugreek leaves

  • 1 teaspoon cumin

  • 1 teaspoon turmeric

  • 1/2 teaspoon chili powder

  • 1 teaspoon garam masala

  • 1/4 cup heavy cream

  • 1/2 pound block paneer

  • 1 tablespoon oil

STEPS:

  1. In a pan cook baby leaf with cumin seeds over 1 tablespoon oil.

  2. Stir in onions, garlic, and ginger until onions are translucent. Add tomatoes, fenugreek leaves, turmeric, chili powder, garam masala, and cook until they are soft and squishy. Then add heavy cream and paneer.

  3. Serve with naan, rice, or anything you like!
