Day 288: Peppermint Chocolate Chip Cookies

I can't believe it's been 12 days of cookie baking already! It went by so fast! I'm celebrating with these amazing peppermint chocolate chip cookies.

They have a great crunch from the candy canes and are perfect for the holidays, you'll be making them on repeat in no time at all!

Today I also donated my 12 cookie recipes, a total of 280 cookies (a big thanks to everyone who helped me make them) to the homeless shelter for a little holiday treat! Here is my finished cookie box:

For the peppermint chocolate chip cookies: these are crispy cookies with a gooey center, absolutely delicious!

For a little extra sweetness, you can take a few mini marshmallows and stick them in the middle of the cookies. I use this technique for my Nutella stuffed cookies so check that out if you are interested.

This is the ultimate holiday cookie! It's minty and full of chocolate. Add some toffee bits for some crunch!

RECIPE:


INGREDIENTS:

  • 1/2 cup butter, softened

  • 1/4 cup granulated sugar

  • 1/2 cup brown sugar

  • 1 egg

  • 1/4 teaspoon peppermint extract, optional

  • 1 1/4 cup bread/all-purpose flour

  • 1 teaspoon baking soda

  • 1/2 cup chocolate chips

  • 1/4 cup chopped toffee bits, optional

  • 1/4 cup chopped candy canes

  • 1 1/2 teaspoons kosher salt, for sprinkling

STEPS:

  1. Preheat your oven to 350 degrees F, and line a baking sheet with parchment paper.

  2. With an electric mixer cream the butter and two sugars for two minutes until fluffy. Pour in the egg and peppermint extract. Add flour and baking soda and mix for three minutes. The cookie dough will form a ball if you wait long enough. Fold in your chocolate chips, chopped candy canes, and/or toffee bits.

  3. With an ice cream scoop, drop the cookie dough onto the prepared baking sheet. Roll the cookies into balls and place 3" away from each other. Flatten slightly and sprinkle the kosher salt. Bake for 15-20 minutes or until the bottom is golden brown.
