Day 197: Pumpkin Chocolate Chip Muffin Tops

Muffin tops (or muffies) are definitely the best kind of muffins ever invented. They are quick and easy and perfect for Fall!

You know that crispy muffin top with the fluffy inside? Well that's what a muffie basically is.


It's absolutely delicious in all ways! You don't even need any special equipment! Just a baking sheet.


Have you ever been to Panera Bread, the restaurant? That's where I first saw these chocolate chip muffies. It was so so good.

Aside from today I had only eaten plain chocolate chip muffies. But I heard that there are also pumpkin muffies, and I thought that would fit in with the theme of Fall better.


I also added chocolate chips so it would be a mixture of both the plain muffie and the pumpkin kind.

RECIPES:


INGREDIENTS:

  • 1 egg

  • 1/2 cup granulated sugar

  • 1/4 cup vegetable oil

  • 1/2 cup pumpkin puree

  • 2 cups all-purpose flour

  • 3/4 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon ground cinnamon

  • Pinch of ground nutmeg

  • 1/8 teaspoon ground cloves

  • 1/2 cup chocolate chips

STEPS:

  1. Preheat your oven to 350 degrees F and line a baking sheet with parchment paper.

  2. In an electric mixer beat together your egg and sugar until fluffy about 2-3 minutes. Add you oil and pumpkin puree. Slowly add your dry ingredients to the bowl: flour, baking powder, baking soda, cinnamon, ground nutmeg, ground cloves. Fold in your chocolate chips.

  3. With a cookie scoop (about 3 tablespoons), drop your muffie batter onto your parchment paper. Flatten slightly and bake for 8 minutes. Rotate your baking sheet and bake for another 8 minutes. Serve warm.
