I love this strawberry baked French toast, because it's so simple. Not to mention it feeds a crowd! This recipe is no exception.
A dear family friend kindly gave me the book Love and Lemons Everyday and I knew I had to make the strawberry baked French toast!
The strawberries add some natural sweetness and look pretty on the casserole. I usually don't like strawberries that much. I'm not much of a fruit person. But when I tried this casserole it tasted fabulous! It was bright and absolutely fantastic!
If you want, you can use sandwich bread, but I recommend challah or similar breads because it's a little sturdier. I don't like whole wheat sandwich bread as it tends to be salty.
This is perfect for breakfast or brunch, and is so simple to make. No soaking overnight. Just stir your egg mixture and pour in onto your bread, top with strawberries and almonds and bake. How simple is that?

RECIPE:
INGREDIENTS:
3 eggs
3/4 cup almond milk
1 tablespoon maple syrup, extra for serving
1 tablespoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ground ginger
1/4 teaspoon cardamom
1/8 teaspoon salt
1/8 teaspoon black pepper
8 cups bread, cut into cubes
16 ounces strawberries, hulled and halved
1/3 cup sliced almonds
STEPS:
Preheat an oven to 400 degrees F and add all your cubed bread slices inside a casserole pan. In the casserole mix in half of your strawberries.
In a medium bowl combine your eggs, almond milk, maple syrup, cinnamon, nutmeg, ginger, cardamom, salt, and black pepper. Pour your egg mixture over your bread cubes in the casserole pan and sprinkle with remaining strawberries and all of your almonds. Bake for 20 minutes. Serve with extra maple syrup if desired.
