Day 299: Strawberry Chocolate Chip Cookies

It's almost my 300th day! These strawberry chocolate chip cookies are so simple and delicious!

The strawberries are bright and the chocolate chips taste fantastic paired with them. Instead of using fresh strawberries, I use freeze-dried.

Fresh strawberries have a lot of moisture, so freeze-dried strawberries are a better option.

A tip is to reserve some extra freeze-dried strawberries so you can have bright red strawberries sticking out on the top of the cookies. Just stick them into the cookies once taken out of the oven to cool.

You see, the freeze-dried strawberries tend to brown, so they aren't attractive, but it's still amazing nonetheless.

This cookie recipe tastes just like chocolate-covered strawberries in cookie form. It makes a great treat that you're sure to love!

RECIPE:


INGREDIENTS:

  • 1/2 cup butter, softened

  • 1/4 cup granulated sugar

  • 1/2 cup brown sugar

  • 1 egg

  • 2 teaspoons vanilla extract

  • 1 1/4 cup bread flour, or all-purpose flour

  • 1 teaspoon baking soda

  • 1/2 cup chocolate chips

  • 1/4 cup freeze-dried strawberries

STEPS:

  1. Preheat your oven to 350 degrees F, and line a baking sheet with parchment paper.

  2. With an electric mixer cream the butter and two sugars for two minutes until fluffy. Pour in the egg and vanilla extract. Add flour and baking soda and mix for three minutes. The cookie dough will form a ball if you wait long enough. Fold in your chocolate chips and freeze-dried strawberries.

  3. With an ice cream scoop, drop the cookie dough onto the prepared baking sheet. Roll the cookies into balls and place 3" away from each other. Flatten slightly and sprinkle the kosher salt. Bake for 15 minutes or until the bottom is golden brown.
