I had great reviews about my sugar free blueberry muffins, so I thought I would make another version of a sugar free muffin.
As I brainstormed different muffin flavors and looked through my fridge, I saw that I had some apples on hand! I decided to make apple muffins. Which are perfect for fall!
These apple muffins are sweetened by a bit of maple syrup, banana, and apples! I used Gala Apples, but you can use any type of apple you want . If you don't have maple syrup you can use honey instead.
The mixture will look pretty thick, but that's normal for muffins! You don't want to add anymore milk or else it will not have the right consistency.
These are absolutely delicious in all ways! The apples melt down and caramelize. It's really fantastic!

RECIPE:
INGREDIENTS:
1 3/4 cup whole wheat flour
1 1/2 teaspoon baking powder
1 1/2 teaspoon cinnamon
1/2 teaspoon baking soda
1 cup apple, grated
1 cup apple, chopped
1 banana, mashed
1 egg
1/3 cup vegetable oil
1/4 cup maple syrup or honey
1/4 cup milk
STEPS:
Preheat your oven to 425 degrees F and line 3 muffin tins with cupcake liners.
Whisk together your flour, baking powder, cinnamon, baking soda, grated apple, and chopped apple in a large bowl. In a smaller bowl mix your mashed banana, egg, oil, maple syrup and milk. Add your wet mixture into your dry and stir until you have a batter where no flour streaks are shown.
With a cookie scoop, drop batter into your arranged muffin tins. Bake for 20 minutes and cool for 5 minutes before serving.
