I love these easy sugar-free orange muffins for my breakfast or snack. Not only are they giant, but they taste delicious as well!
Getting the orange taste in these muffins will require quite a lot of orange zest. I used about 2-3 oranges as well as their juice.
Make sure to use freshly squeezed orange juice. The best way to do this is to use the oranges that you zested. This way you won't have to waste any oranges!
You can also add some mix-ins. I love to add 1/2 cup of fresh cranberries or even two tablespoons of poppyseeds!
Fill these muffins up to the top of your muffin pan. This will get you large domed tops. Citrusy and moist, you will love these orange muffins!

INGREDIENTS:
1 1/2 cups whole wheat flour
1 1/2 teaspoons baking powder
1/2 cup orange juice
3 bananas, mashed
2 1/2 tablespoons orange zest
1 egg
1/3 cup butter, melted
STEPS:
Preheat your oven to 425 degrees F and spray a muffin tin with baking spray.
In a large bowl, combine all your ingredients. Fold gently, and with an ice cream scoop, drop the batter into the greased muffin tin. Fill the batter up to the top of the muffin tin.
Fill the batter to the top. Bake for 5 minutes, then lower the temperature to 350 degrees F. Bake for 20 minutes.
