Day 291: Sugar-Free Pear Muffins

These are a new addition to my healthy, sugar-free muffin recipes! Introducing pear muffins, they are so moist and full of flavor.

I like to add cinnamon and nutmeg for a fall/winter taste. For this recipe you don't have to do anything special to the pears, just chop them up and gently stir them into the muffin batter.

Additional extras for your muffin batter include chocolate chips, chopped nuts, and your favorite spices.

Muffins are easy and super flexible, so experiment! The smell that will take over your kitchen is amazing!

This is a great (and quick) healthy breakfast/snack idea that will be a favorite in no time at all!

RECIPE:


INGREDIENTS:

  • 1 1/2 cups whole wheat flour

  • 1 1/2 teaspoons baking powder

  • 1 teaspoon baking soda

  • 3/4 teaspoon cinnamon

  • 1/2 teaspoon nutmeg

  • 2 tablespoons milk

  • 3 bananas, mashed

  • 1 egg

  • 1/3 cup butter, melted

  • 1 1/2 cups chopped pears

STEPS:

  1. Preheat your oven to 425 degrees F and spray a muffin tin with baking spray.

  2. In a large bowl combine all your ingredients. Fold gently and with an ice cream scoop, drop the batter into the greased muffin tin.

  3. Fill the batter to the top. Bake for 5 minutes then lower the temperature to 350 degrees F. Bake for 20 minutes.
