Day 354: Sugar-Free Strawberry Muffins

Strawberry muffins are an easy breakfast treat, not to mention you probably have all the ingredients in your kitchen already!

It's really important to use your sweetest strawberries because it will really make a difference!

The bananas add sweetness to these muffins, so don't use any less than directed. Also, use the bananas with the brownest spots!

Fill your muffins over the muffin liners. It may seem odd, but trust me, it will give your beautiful domed tops.

Just look at these muffins; how can you not resist one? These muffins are jam-packed with juicy strawberries!

 

|Level: 👩🏽‍🍳|Time: 35 minutes|Serves: 6-8|

RECIPE:

INGREDIENTS:

  • 1 1/2 cups whole wheat flour

  • 1 1/2 teaspoons baking powder

  • 1 teaspoon baking soda

  • 1/4 cup milk

  • 3 bananas, mashed

  • 1 egg

  • 1/3 cup butter, melted

  • 1 1/2 cups chopped strawberries

STEPS:

  1. Preheat your oven to 425 degrees F and spray a muffin tin with baking spray.

  2. In a large bowl combine all your ingredients. Fold gently and with an ice cream scoop, drop the batter into the greased muffin tin. Fill the batter to the top of each muffin tin.

  3. Bake for 7 minutes then lower the temperature to 350 degrees F. Bake for 25 minutes.
