Day 283: Thumbprint Cookies

These buttery thumbprint cookies are full of flavor from the jam. I like to drizzle a basic glaze over my cookies but that's optional.

I love a good, soft, melt in your mouth thumbprint cookie. They're tiny yet so delicious! It makes a great small treat.

Thumbprint cookies are very popular for the holidays so I knew I had to bake a batch for my cookie box! I use strawberry jam because that's my all-time favorite jam.

However, you can use any jam you want. Any will do! Depending on how soft you like your cookies it will depend on the baking time.

If you like super soft cookies bake them for 20 minutes, if you like them just baked (and a little crispy) bake them for 25 minutes.

RECIPE: INGREDIENTS:

  • 1 stick butter, softened

  • 1/3 cup powdered sugar

  • 1 teaspoon vanilla extract

  • 1 egg

  • 1 1/3 cup all-purpose flour

  • 3 tablespoons jam/jelly of choice

Glaze:

  • 1 cup powdered sugar

  • 1-2 tablespoons milk

STEPS:

  1. Preheat your oven to 350 degrees F and line a baking sheet with parchment paper.

  2. With an electric mixer cream your butter and powdered sugar. Add in your egg and vanilla extract. Mix for two minutes and stir in the flour. With an ice cream scoop, drop your cookie dough onto the parchment paper. Roll into balls and flatten slightly. With your thumb poke a hole into each cookie. Fill with a small spoonful of jam. Bake for 20-25 minutes. Cool for 5 minutes.

  3. In a small bowl combine the powdered sugar and milk. Drizzle over cooled cookies.
