Day 309: Til Chikki

Til chikki is a sesame treat. This sweet is done in 15 minutes, and the results are always amazing!

You only need three ingredients for this recipe, and they are just pantry items. Til chikki is a cross between caramel shards and candy bark. Traditionally til chikki is made with jaggery, but that can be hard to find here in the US, so in this recipe I use sugar.

You can add nuts (pistachios, almonds, cashews) if you want. Stir them in when you add the sesame to the caramel.

Make sure to spread the til chikki as soon as you pour it onto the parchment paper. It hardens quite quickly, so be careful! Another thing to do before the til chikki hardens is cut out squares.

Cutting out diamonds also works! Both look great! Use a knife or a pizza cutter to this! I hope you enjoy this delicious Indian sweet! It's easy to make and great for gifting.

RECIPE:


INGREDIENTS:

  • 1/2 cup sesame seeds

  • 1 cup granulated sugar

  • 2 teaspoons cardamom, crushed

STEPS:

  1. Over a clean surface lay out a sheet of parchment paper. In a large saucepan over low heat, roast the sesame seeds and cardamom for about four minutes. Take off heat and set aside. In a pot, heat the sugar until liquid. It should be golden in color. Immediately add in the sesame seeds and pour the mixture onto the parchment paper.

  2. Quickly spread the til chikki evenly into a large square. Cut gently with a knife to make square indentations. Wait three minutes for the caramel to cool and break out squares as desired.
