Day 178: Watermelon Rice Krispies Treats

Happy labor day weekend everyone! I love hot summery days (like today) and long weekends. And you know what else I like?


Watermelons and rice krispie treats! So why not put them together?


These are the cutest rice krispie treats ever! They're little watermelons with chocolate chip seeds.


I've got to tell you this- I LOVE rice krispies. I love them as cereal and of course, rice krispie treats.


I don't eat them too much, but when I do, I get kind of addicted. I just keep eating them!


These are perfect for summer weather and they taste amazing. It's also a lot less messy compared to juicy watermelon, but just as delicious for sure! :)

RECIPE:


INGREDIENTS:

  • 1 1/2 tablespoons butter

  • 1/4 teaspoon salt

  • 2 1/2 cups marshmallows

  • 4 drops green food coloring (you might need more or less)

  • 2 1/2 cups rice krispies

  • 2 tablespoons butter

  • 1/2 teaspoon salt

  • 3 drops red food coloring (you might need more or less)

  • 3 1/2 cups rice krispies

  • 3 tablespoons mini chocolate chips

STEPS:

  1. In a medium pan (over medium-high heat) melt your butter. Add marshmallows, salt, and green food coloring. Add you 2 1/2 cups rice krispie treats into this mixture. Set aside.

  2. In another medium size pan, melt your butter again. Add marshmallows, salt, and red food coloring. Fold in 3 1/2 cups rice krispies.

  3. Line a 9" circle pan with wax paper. Make a 2" wide ring of green rice krispies around the edge of your pan. Add in your red rice krispies in the middle. Set aside at room temperature for 15 minute. Cut into six triangles and serve.
