Week 52: Tom Cruise's Coconut Bundt Cake

Every year, Tom Cruise gives this special coconut bundt cake from Doan's Bakery to all his loved ones. For my first year of this cake challenge, I wanted to share this copycat recipe with all of you, who I am so grateful for supporting me in my baking journey.

I can't believe that it has already been one year since I started my "Cakes from Around the World" challenge. Not to mention, I have been working on this blog for over five years. I have learned so much about baking and photography, and I am so glad to share this journey with all of you!

I will be continuing this challenge because it has been so fun. I genuinely love Saturdays because they mean baking a new, delicious cake. I can't wait to try more cakes in the coming weeks.

But, back to this amazing coconut cake. The addition of white chocolate elevates it to the next level. I cannot recommend you try this recipe enough.
RECIPE:
INGREDIENTS:
Cake:
2 cups granulated sugar
1 cup unsalted butter, softened
5 eggs
1 cup yogurt
2 teaspoons coconut extract
2 3/4 cups all-purpose flour
1/2 teaspoon baking powder
8 oz. white chocolate chips
Frosting:
8 oz. cream cheese, softened
3/4 cup unsalted butter, softened
2 1/4 cups powdered sugar
1 cup coconut flakes
1/2 teaspoon coconut extract
STEPS:
Preheat your oven to 350 degrees F, and grease a bundt cake pan with baking spray.
In the bowl of a stand mixer, cream the butter and sugar over medium speed. After a few minutes, add the eggs and continue mixing. Fold in the remaining ingredients and pour into your prepared bundt cake pan.
Bake for 70 minutes and set aside to cool once done.
While the cake is cooling, make the frosting. In a bowl, beat the cream cheese, butter, powdered sugar, coconut flakes, and coconut extract.
Frost the cake with your coconut frosting and serve.
