Week 56: Pineapple Upside Down Cake

I can't believe I have blogged for about five years, and I still have not made a pineapple upside down cake. It's such a classic.

Don't worry about not lining your cake pan with parchment paper. The recipe puts butter and brown sugar as a "liner," so your cake is guaranteed to come out perfect.

If you don't love maraschino cherries, feel free to omit them from the recipe. The cake will still taste delicious.

This is the perfect showstopper dessert for any event or gathering. You don't need to frost or decorate the cake; simply flip it upside down and serve.


RECIPE:


INGREDIENTS:

Base:

  • 2 tablespoons unsalted butter, melted

  • 1/3 cup brown sugar

  • 6 canned pineapple rings

  • 12 maraschino cherries

Cake:

  • 1/2 cup salted butter, softened

  • 3/4 cup granulated sugar

  • 2 eggs

  • 1 3/4 cups all-purpose flour

  • 1 teaspoon baking powder

  • 1/4 teaspoon baking soda

  • 1/3 cup pineapple juice (from the canned pineapple rings)

  • 1/3 cup yogurt

STEPS:

  1. Preheat your oven to 350 degrees F, and grease a 9-inch cake pan with the melted butter. Sprinkle the brown sugar over the butter and spread it evenly to cover the bottom of the cake pan.

  2. Drain the pineapple and maraschino cherries from their can and pat dry with a towel. Save the pineapple juice for later!

  3. Layer the pineapple rings over the brown sugar in your cake pan. Next, put a maraschino cherry inside each pineapple ring.

  4. In a stand mixer, cream the butter and sugar until light and fluffy. Then, add eggs and continue mixing.

  5. In a separate bowl, mix the flour, baking powder, and baking soda together. Add half of the flour mixture into your creamed butter/sugar and mix. Then, add the yogurt and reserved pineapple juice, and follow with the remaining flour mixture.

  6. Pour the batter over the pineapples in your cake pan and bake for 25 minutes. Then, cover with aluminum foil and bake for 10 minutes.

  7. Allow the cake to cool for 30 minutes. Place a plate over the top of the cake pan and then, without hesitating, flip the cake. Remove the cake pan and serve!
