Week 57: Mango Tres Leches Cake

Imagine a mango lassi paired with a delicious tres leches cake; that's what this mango tres leches cake tastes like.

Mangos are back in season, and I just bought three whole boxes. They are my favorite fruit, and I love making desserts with them.

While you don't need fresh mangoes for this recipe, I decided to decorate the top of the cake with mango puree to make it look extra special.

I baked this cake for my dad's birthday! It feeds large crowds and is so easy to transport or share.
RECIPE:
INGREDIENTS:
Cake:
4 egg whites, separated
3/4 cup granulated sugar
1/4 cup mango puree
1 1/2 cups all-purpose flour
3/4 teaspoon baking powder
1/2 cup mango chunks, cut into 1/2-inch cubes
Soak:
1/4 cup mango puree
6 oz condensed milk
6 oz evaporated milk
Frosting:
3/4 cup heavy whipping cream
1/2 cup powdered sugar
STEPS:
Preheat your oven to 350 degrees F, and grease a 9-inch cake pan with butter.
In the bowl of your stand mixer, beat the egg whites and 1/4 cup of the sugar until the stiff peaks form.
In another bowl, beat the egg yolks and the rest of the sugar until light and fluffy. Add the mango puree, and follow with the flour and baking powder. Gently fold in the egg whites and mango chunks.
Pour the batter into your cake pan and bake for 25 minutes. In a small bowl, combine the condensed milk, evaporated milk, and mango puree.
Once the cake is done, poke holes all across the surface of the cake. Pour the soak over the cake and let it absorb in. Cover with foil or plastic wrap and allow the cake to cool for an hour.
While the cake is cooling, beat the heavy whipping cream with powdered sugar until stiff peaks form. Spread over the cooled cake, and cover and chill once more, this time for at least three hours.
