Week 64: Passionfruit Cake

This passionfruit cake is a dessert like no other. It's the perfect combination of tangy and sweet.

This cake is flavored with a passionfruit curd. I bought mine from a grocery store, but you can make the curd yourself.

I used unseeded passionfruit curd because I am not a fan of the texture of the seeds. However, feel free to keep the seeds in!

I feel like this recipe is the elevated version of a lemon-layered cake. The passionfruit makes the cake burst with flavor.
RECIPE:
INGREDIENTS:
Cake:
6 large eggs (room temperature)
1 cup sugar
1/4 cup passionfruit curd
1 cup all-purpose flour
2 teaspoons baking powder
1/4 cup melted butter
Frosting:
1 1/2 cups heavy whipping cream
3/4 cup powdered sugar
1/3 cup passionfruit curd (for filling the center of the cake)
STEPS:
Preheat your oven to 350 degrees F, and line two 6-inch cake pans with parchment paper.
In a stand mixer, beat eggs, passionfruit curd, and sugar. Slowly add the flour, baking powder, and butter. Pour into the cake pan and bake for 30 minutes. Once the cakes are done, set them aside to cool.
In a separate bowl, beat the heavy whipping cream and powdered sugar until stiff peaks form. This is your frosting.
To assemble your cake, spread a layer of frosting over one cake layer. Using a spoon, create a crater in the center of the frosting. Then, fill the "hole" with your passionfruit curd. Top with another cake layer and frost around the exterior of the cake.
