Week 68: Sfouf

Sfouf is a Lebanese dessert that is flavored with a hint of turmeric and sesame paste.

Sfouf is a very unique cake. There are no eggs in this recipe, which makes it vegan-friendly!

The cake's name directly translates to "lines" in Arabic, because it's traditionally cut into square slices.

This is the perfect cake to have with coffee because it's not too sweet but still very flavorful.

RECIPE:


INGREDIENTS:

  • 1 1/4 cups semolina flour

  • 1/3 cup all-purpose flour

  • 1 cup granulated sugar

  • 1 teaspoon baking powder

  • 2 tablespoons turmeric powder

  • 1 cup whole milk

  • 1/3 cup vegetable oil

  • Tahini sesame oil, to grease the pan

  • Pine nuts, to decorate the cake

STEPS:

  1. Preheat your oven to 350 degrees F, and line an 8-inch cake pan with tahini sesame oil.

  2. In a bowl, mix all the cake ingredients except for the pine nuts.

  3. Pour the batter into your prepared pan, and top with the pine nuts. Bake for 30 minutes and set aside to cool to room temperature.

  4. Cut the cake into squares or slices and serve.
