Week 69: Banana Peanut Butter Cake

This banana peanut butter cake is rich and fluffy at the same time. My family devoured it within minutes.

This cake reminds me of my favorite childhood memory. When I was little, I loved cutting up slices of banana and eating them with a spoonful of peanut butter.

So, this recipe feels like an elevated yet nostalgic version of my childhood snack. The cake batter is made in one bowl, making it a very easy dessert to prepare.

If you want to make this cake even more decadent and are a fan of chocolate, I recommend adding 3/4 cup of chocolate chips to the batter.
RECIPE:
INGREDIENTS:
Cake:
3/4 teaspoon baking soda
1 1/2 cups all-purpose flour
1/2 cup granulated sugar
1/4 cup brown sugar
3 bananas, mashed
2 eggs
1/4 cup vegetable oil
1/3 cup peanut butter
Frosting:
1/2 cup butter, softened
1 cup powdered sugar
1/4 cup peanut butter
STEPS:
Preheat your oven to 350°F, and grease an 8-inch cake pan with butter.
In a bowl, mix together all the ingredients for the cake batter. Pour the batter into your prepared pan and bake for 25-30 minutes or until golden brown.
While the cake cools, make the frosting. In the bowl of your stand mixer, beat the butter and powdered sugar until light and fluffy. Add the peanut butter and mix until combined.
Frost the cake and it’s ready to serve!
