Week 79: Pumpkin Loaf Cake

Pumpkin cakes are back with fall weather, so I wanted to share this quick pumpkin loaf with maple frosting to celebrate.

Admittedly, I am not a fan of pumpkin in most food. I hate the Starbucks pumpkin chai lattes, and I don’t like it in savory foods either.

However, I love pumpkin in cakes. Every Thanksgiving, I bake the most perfect pumpkin cake roll, and it hits every time.

This pumpkin loaf is like an easier version of my Thanksgiving dessert. It’s made in under an hour and in one bowl. Plus, it tastes amazing!
RECIPE:
INGREDIENTS:
Cake:
2 eggs
1/3 cup vegetable oil
1/2 cup maple syrup
1/3 cup granulated sugar
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
Frosting:
1 cup powdered sugar
1/3 cup maple syrup
STEPS:
Preheat your oven to 350 degrees F, and line a loaf pan with parchment paper.
In a bowl, mix together all the cake ingredients to form a thick batter. Pour batter into a loaf pan and bake for 45 minutes. Set aside to cool to room temperature.
In a small bowl, mix the powdered sugar and maple syrup together. Drizzle the glaze over the cake and serve.
