Week 81: Gingerbread Loaf

Ever since the Starbucks holiday menu dropped last week, I have been in a very festive mood!

I’m taking a temporary pause on all the fall-themed desserts I’ve been baking to make this dreamy gingerbread loaf cake.

It’s easy to make, perfect for a quick breakfast, and so perfect for the cold weather. Make this while you’re waiting for Starbucks to bring back its famous gingerbread loaf.

You can serve this gingerbread loaf with a glaze or with a light dusting of powdered sugar. Both taste delicious!

RECIPE:


INGREDIENTS:

  • 1/2 cup unsalted butter, softened

  • 1/2 cup granulated sugar

  • 1 egg

  • 1 cup molasses

  • 1 1/4 teaspoon baking soda

  • 1 teaspoon ground cinnamon

  • 1 teaspoon ground ginger

  • 2 cups all-purpose flour

  • Powdered sugar, if desired

STEPS:

  1. Preheat your oven to 350°F, and line a loaf pan with parchment paper.

  2. In the bowl of a stand mixer, cream the butter and sugar until light and fluffy. Add the egg and molasses. Then, mix in the dry ingredients: the baking soda, cinnamon, ginger, and flour.

  3. Pour the batter into a prepared pan and bake for 30 minutes. Set aside to cool to room temperature and serve with powdered sugar, if desired.
