Ever since the Starbucks holiday menu dropped last week, I have been in a very festive mood!

I’m taking a temporary pause on all the fall-themed desserts I’ve been baking to make this dreamy gingerbread loaf cake.

It’s easy to make, perfect for a quick breakfast, and so perfect for the cold weather. Make this while you’re waiting for Starbucks to bring back its famous gingerbread loaf.

You can serve this gingerbread loaf with a glaze or with a light dusting of powdered sugar. Both taste delicious!
RECIPE:
INGREDIENTS:
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1 egg
1 cup molasses
1 1/4 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
2 cups all-purpose flour
Powdered sugar, if desired
STEPS:
Preheat your oven to 350°F, and line a loaf pan with parchment paper.
In the bowl of a stand mixer, cream the butter and sugar until light and fluffy. Add the egg and molasses. Then, mix in the dry ingredients: the baking soda, cinnamon, ginger, and flour.
Pour the batter into a prepared pan and bake for 30 minutes. Set aside to cool to room temperature and serve with powdered sugar, if desired.
Enjoy!
