Day 46: Buttermilk Garlic Biscuits

Today I made buttermilk garlic biscuits. To be honest they pretty similar to my Herb Biscuits, but they are still pretty different that my herb biscuits. They are super flaky and they melt in your mouth because of the buttermilk. Speaking of buttermilk, usually you eat these buttermilk biscuits with jam but I chose to make the more garlicky with the garlic butter I brush on the top of my biscuits. You can take out the herbs and garlic butter and maybe add some sugar, and it will still taste amazing!



I used the cut in method to blend my butter into the dry mixture but you can also use a food processor.

Fold both sides into the middle and continue with the opposite side 4 times.

Bake at 450 degrees F, for 12 - 15 minutes. Look at the middle one on the bottom row, I didn't have enough dough so it looks very smooshed and tiny. 😂

Make the garlic butter by mixing melted butter and 1 clove of garlic. You can also add some parsley.

You don't have to use rosemary or thyme. Just don't mix anything that's bitter, such as dried oregano or anything else like that.

It tasted so flaky and nice. When I bit into it, it melted in my mouth!




RECIPE:


INGREDIENTS:

  • 3/4 cups all-purpose flour,

  • 1 Tablespoons baking powder

  • 1/2 teaspoon salt

  • 1/2 cup unsalted butter, very cold and cubed

  • 1/2 cup cold buttermilk

  • 1 teaspoon honey

  • 1/2 teaspoon rosemary

  • 1/2 teaspoon thyme

Garlic Butter

  • 1 tablespoon butter

  • 1 clove garlic

  • Some parsley (optional)


STEPS:

In a medium bowl whisk together flour, baking powder, salt, rosemary, and thyme. Cut in the butter. Make a well in the center and pour the buttermilk and honey.


Mold the dough in to a rectangle and take one side and fold to the middle. Do this to the opposite side as well, then flip and do the same thing. Continue folding until you've done it 4 times. Roll out so the dough is 1" thick and with a circle cookie cutter, cut and place them on the baking sheet. Bake for 12-15 minutes.

Meanwhile make garlic butter by combining the melted butter and garlic. Brush the garlic butter over biscuits and serve.
