Week 103: Cinnamon Roll Cake

What better way to start your day than by eating a massive cinnamon roll cake? I’ve been requested to make this, and I’m so happy I did because it looks so cool!

In all honesty, I’m not a big fan of cinnamon rolls. At least in my school, the cinnamon rolls they give out always taste brittle and dry.

However, I’ve been converted to a cinnamon roll fan. All that was missing was a GOOD recipe. This cinnamon roll cake is fluffy and full of flavor.

I think my favorite part about classic cinnamon rolls is the gooey center. The upside to eating the dessert in the form of a cake is that every bite feels like that delicious center!
RECIPE:
INGREDIENTS:
Dough:
2 1/2 cups all-purpose flour
1/2 cup granulated sugar
1 teaspoon active dry yeast
1/4 cup unsalted butter
1/2 cup milk
1 egg
Cinnamon Filling:
2 tablespoons butter, softened
1/3 cup granulated sugar
1 tablespoon ground cinnamon
Icing:
2 tablespoons butter, softened
1/3 cup cream cheese
1 cup powdered sugar
1/3 cup milk
STEPS:
In a small bowl, microwave the milk and butter together until the butter is melted.
In the bowl of a stand mixer fitted with a hook attachment, mix the flour, sugar, yeast, and the butter-and-milk mixture. Add the egg and knead until the dough bounces back when touched. Cover the bowl and allow it to proof for 1 hour.
Prepare an 8-inch cake pan with butter and preheat your oven to 350 degrees F.
Dust a surface with flour and roll your dough out into a 15x12-inch rectangle. Brush with the softened butter and sprinkle your cinnamon mixture evenly. Cut the rectangle into 2-inch strips, roll one into a spiral, and place it onto the prepared baking pan. Wrap each strip around the center roll to create an even larger spiral. Cover and allow the dough to proof for 2 more hours.
Bake for 40 minutes. Set aside to cool to room temperature.
While the cake is baking, make the icing. In a bowl, beat the powdered sugar, cream cheese, butter, and milk until light and fluffy. Spread the icing onto the cake when ready to serve.
