Can you believe it has been 20 weeks since I started this challenge? Time is just flying by.
To celebrate, I baked this delicious Mawa cake. Mawa, sometimes known as khoya, is essentially dried-up milk solids.
The Mawa cake has been a popular South Asian dessert since it was introduced in the late 19th century.
This recipe serves as the perfect teatime cake. It is perfectly sweet, and the Mawa provides a unique flavor. Not to mention, the dessert comes together so fast!
RECIPE:
INGREDIENTS:
Cake:
7 tablespoons butter, room temperature
100 grams Mawa, grated
3/4 cup granulated sugar
1 1/3 cup all-purpose flour
1/2 teaspoon cardamom
1/2 teaspoon baking powder
Toppings:
1/4 cup slivered almonds
2 tablespoons pistachios, crushed
STEPS:
Preheat your oven to 350 degrees F, and line an 8-inch cake pan with parchment paper.
Beat the butter, Mawa, and sugar until light and fluffy with a mixer. Then, add the flour, cardamom, and baking powder. Pour into the prepared pan, and top the cake with the slivered almonds and crushed pistachio.
Bake for 45 minutes until golden brown.
