Week 94: Blueberry Crumb Cake

A blueberry crumb cake is the perfect way to start your Saturday off. It’s my new favorite breakfast treat!

If you aren’t a big fan of blueberries, you can try it with strawberries or raspberries. Looking back, they might’ve been a better choice of fruit on Valentine’s Day.

But no regrets! I’m not the biggest fan of blueberries, but this cake fully converted me. They add a burst of flavor in every bite.

If you want to elevate this cake to the next level, warm it up in the microwave and top it with a scoop of vanilla ice cream.
RECIPE:
INGREDIENTS:
Crumble:
1/2 cup all-purpose flour
3 tablespoons butter, melted
1/2 cup granulated sugar
Cake:
3/4 cup white sugar
1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/2 cup milk
1/3 cup vegetable oil
1 egg
1 cup blueberries
STEPS:
Preheat your oven to 350 degrees F, and line a 9-inch cake pan with parchment paper.
To make the crumble, mix the melted butter, flour, and sugar in a small bowl.
In a large bowl, mix all the ingredients together, adding the blueberries last. Pour the batter into your prepared pan and top with crumble. Then, bake for 40 minutes.
