Week 16: Pave

Pave is a Brazilian dessert that layers cookies or ladyfingers with vanilla custard and whipped cream. It's a perfect alternative if you aren't a fan of the coffee-centered tiramisu.

While the cake is usually served around the holiday season, I think it's a great dessert to bring to any event during any season. It just tastes that delicious.

The digestive cookies I used were called Maria cookies, and one pack is perfect for making this recipe. They make the ideal base to be layered on top of.

Pave can even be flavored with either liquor or tropical fruit flavors. Feel free to experiment by adding different flavorings to the custard.

 

RECIPE:


INGREDIENTS:

Custard:

  • 4 egg yolks

  • 1 can condensed milk (14 oz.)

  • 1 tablespoon cornstarch

  • 2 cups whole milk

  • 1 teaspoon vanilla extract

Whipped Cream:

  • 3/4 cup heavy whipping cream

  • 1/3 cup powdered sugar

Cookies:

  • 1 package of Maria cookies, other digestive cookies, or ladyfingers

STEPS:

  1. In a pot, heat the egg yolks, condensed milk, cornstarch, milk, and vanilla extract over medium heat. Continuously stir the mixture and cook for about 5-10 minutes until the mixture resembles a thick custard. Set aside to cool for an hour in the refrigerator.

  2. In the bowl of your stand mixer, beat the heavy whipping cream and powdered sugar until stiff peaks form.

  3. To assemble, spread half of your custard over the base of a 9x9-inch cake pan and place a layer of cookies over that. Then, repeat to finish the custard and top the second layer with whipped cream.

  4. Chill in the refrigerator for 2-3 hours but preferably overnight. Decorate with chocolate shavings.
