Week 95: Strawberry Olive Oil Cake

I love a good olive oil cake; it’s easy to make but so rich and decadent. The strawberries add a burst of flavor that will make you want seconds.

The strawberries in this cake are curing my seasonal depression. Nothing beats a lemon and strawberry combination on a summer day.

Plus, the olive oil adds an extra layer of flavor to this cake. It complements the strawberries so well, and I think it makes the cake feel more elevated.

I can’t wait to make this olive oil cake with fresh strawberries as soon as spring arrives. Until then, I’ll keep making this cake to cure my winter blues.  

RECIPE:


INGREDIENTS:

  • 1 cup olive oil

  • 3 eggs

  • 1 teaspoon vanilla extract

  • 1 tablespoon lemon zest

  • 1 1/4 cups granulated sugar

  • 2 cups all-purpose flour

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • Powdered sugar, if desired for topping

STEPS:

  1. Preheat your oven to 350 degrees F, and line a 9-inch cake pan with parchment paper.

  2. In a large bowl, mix together all the ingredients, adding the strawberries last. Pour the batter into your prepared pan and bake for 50 minutes.

  3. Once cooled, dust with powdered sugar, if desired.
