Week 80: Chocolate Chip Cookie Cake

I love making cookie cakes for birthdays or holidays because they are a casual but delicious celebratory dessert!

They're also done in under an hour and made in one bowl. It's almost too easy to make something good.

You can try other add-ins, such as leftover Halloween candy or sprinkles, if you aren't a fan of chocolate chips.

My personal favorite way to eat this cake is to heat it in the microwave and pair it alongside a scoop of vanilla ice cream.

RECIPE:


INGREDIENTS:

  • 3/4 cup unsalted butter, softened

  • 1 1/4 cup light brown sugar

  • 2 eggs

  • 2 1/4 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1 cup chocolate chips

  • Buttercream frosting, optional

STEPS:

  1. Preheat your oven to 350°F, and line a 9-inch cake pan with parchment paper.

  2. In the bowl of your stand mixer, cream the butter and sugar together until light and fluffy. Then, add the eggs and vanilla extract. Slowly mix in the flour, baking soda, and chocolate chips.

  3. Press the cookie dough into the cake pan and top with extra chocolate chips if desired. Bake for 30 minutes and set aside to cool.

  4. Decorate with buttercream frosting, if desired.
