Week 78: Honey Apple Upside Down Cake

I felt like I didn't make enough summer cakes, so now that it's fall, I am planning on making autumn-flavored treats every week! Today, I perfected this honey apple upside-down cake that will leave you wanting seconds, or maybe even thirds.

Upside-down cakes are one of my favorite desserts to make. They are low risk, but high reward. You can make them in under 30 minutes, but they come out of the oven looking like a showstopper.

Plus, you don’t even have to frost or ice the cake because they are already decorated naturally from the fruit.

The addition of the honey works so well in this cake. The apples get perfectly caramelized, and they leave the signature dark brown finish to the cake.

RECIPE:


INGREDIENTS:

Apple Decoration:

  • 1/3 cup honey

  • 3 apples, peeled, cored, and sliced thinly

  • 2 tablespoons unsalted butter

Cake Batter:

  • 3/4 cup unsalted butter

  • 3/4 cup granulated sugar

  • 3 eggs

  • 1 1/2 cups all-purpose flour

  • 1 teaspoon ground cinnamon

  • 1 1/4 teaspoon baking powder

  • 1/2 cup honey

  • 1/4 cup Greek yogurt

STEPS:

  1. Preheat your oven to 350 degrees F, and line an 8-inch cake pan with parchment paper.

  2. In a medium pan, over medium heat, bring the honey, butter, and apples to a boil. Lower the heat and let the mixture simmer for 7 minutes.

  3. Pour the apples into the bottom of your prepared pan and set aside to cool.

  4. In the bowl of a stand mixer, beat the butter and sugar together until light and fluffy. Add the eggs, followed by the flour, cinnamon, and baking powder. Finish by mixing in the honey and yogurt.

  5. Pour the batter over the apples and bake for 35-40 minutes, or until golden brown.
